  • 1 tablespoon of lemon juice
  • 1 large sweet potato, diced
  • 1 15 oz can chickpeas, rinsed and drained
  • 1 cup red lentils, raw and rinsed
  • 5 cups of vegetable broth
  • 1/2 cup kale, stemmed and minced into thin julienne strips
  • Salt to taste

Step by Step:

  1. In a large saucepan over medium heat add the olive oil and allow it to heat up. Add the finely chopped onion and cook for 5-8 minutes until lightly golden.
  2. Add the finely chopped garlic and ginger, continue cooking for a couple of minutes until fragrant. Proceeds with turmeric and paprika and continue cooking for 1 more minute.
